WLJ: Pizza quesadillas

I'm one of those people who pins dozens of recipes on Pinterest but then only makes a fraction of them.  In my defense, I don't like to keep sweets in my house on a regular basis.  And some of the recipes are meant for parties, not solo nights.  Although, I suppose I should abandon that notion and just cook like I'm having a party ... for me!  Ha ha.

Anyhow, a few weeks ago, I was craving pizza, so I decided to try the Pepperoni Pizza Quesadillas pin I had marked.



I changed the ingredients, but only slightly, to make it more WW-friendly.

Ingredients:
2 Mission Carb Balance tortillas
1/4 c. pizza sauce
1/2 c. part-skim mozzerella cheese
8 slices of turkey pepperoni (Tastes as good as the real stuff, but with 70% less fat.)

Directions:
Spray a skillet with cooking spray and heat to medium.

Spread sauce thinly on both tortillas.  So thin it won't drip if you hold it up.

Sprinkle one tortilla with cheese, pepperoni and then another thin layer of cheese.

Place second tortilla (sauce side down) on top of the first one.

Cook in the preheated skillet for 3-5 minutes on each side. Just enough to brown the tortillas.

Slice and serve with pizza sauce (optional).

WW points = 7 per serving
I love that can eat the whole thing for about the same WW points as ONE slice of pizza.


Weight-loss goal: 40 lbs.
This week's progress: +/0 lbs.
Progress to date: -32.2 lbs.
Non-scale victory: I had an awesome run last Wednesday night. I didn't set a distance or time goal on my Nike+ app.  I just selected "basic run" and started going.  I ended up running 3.57 miles in around 40 minutes.  I know that's still considered slow to some people, but I was impressed, and I felt good, so that's all that matters to me.

    Your running pace doesn't matter, as long as it feels good to you - that's the most important thing! Keep up the good work. =)

  3. I am totally of the opinion at this point that the most important thing now is that whatever you are doing, you are having fun. The fact your runs are fun for you is the celebration. And the pizza looks awesome!
