WLJ: Pizza party!

Pizza is one of my favorite foods. I love the cheesy, doughy goodness.

My body, on the other hand, does not love pizza. Too much fat and too many carbs.

Of course, part of that is my lack of self-control. I can't just have one slice of pizza with a nice big salad (even though I love salad too).  I can easily down two or three slices before I pause to think about it.

Not good.

But, I have some good news. Inspired by a local pizza place's low-carb option, I have discovered a way to make a delicious pizza at home. 


Here's what you need:

- Mission Carb Balance Tortillas
- Mama Mary's Pizza Sauce Packets (or any brand that offers smaller packets)
- Turkey pepperoni (you could probably use any meat topping, but it won't be the same point value)
- Green onions
- Weight Watchers Natural String Cheese


Here's what you do:

Preheat the oven to 350 degrees.

Take one tortilla and place it on a baking sheet.

Top it with a little bit of sauce.  I ended up using only about a third of the sauce packet.


Next, add the pepperoni. Seven slices seemed to be plenty for my little pizza.

Chop up one or two green onions and sprinkle it among the pepperoni. I like the color this adds.


Take two string cheese segments. Peel the cheese and make a criss-cross pattern on top of the pizza.


Bake for 10-12 minutes.  Just until the cheese is melty.  I also like to wait until the edges of the tortilla have started to curl just slightly.  I like the crispy crust.


This whole pizza is worth just 7 Weight Watchers points --- 2 points for the tortilla, 1 point for the sauce, 1 point for the turkey pepperoni and 3 points for the cheese. (If you go with one cheese stick, it's only one point, but I like lots of cheese.)

Two slices of my favorite local pizza would be 15-16 points.  That's fine for a day when I can "afford" it, but my low-carb option is good for any day. Or every day. Ha ha.


Weight-loss goal: 40 lbs.
This week's progress: +0.2
Progress to date: -21 lbs.
Non-scale victory:  I'm currently tied for 3rd place in the Biggest Loser Competition at my gym.  If I can hold on to that, I'll get two months of unlimited free classes.  Kind of excited about that.  1st place is a big chunk of cash, but I'm not sure I can get there.

  1. i am so making that pizza next week!! that looks AMAZING and Ava will even eat it, i'm pretty sure. oh and i am super excited for you about doing so well in the biggest loser competition! you are doing so great, i am so proud of you!

  2. I love this! I have made this type pizza with grilled chicken, onions, and BBQ sauce before because BBQ Chicken pizza is one of my all time favorites. Great idea using the turkey pepperoni!
